Meg,
My church is part of long term community development project called New Life for Haiti. Its goal is not to "Americanize" the people of Haiti, but to help them develop their communities and make life better in the ways they perceive they need.
New Life for Haiti plans to build a medical clinic and hospital, start schools, dig wells, provide agricultural education and start new churches.
This is a new coalition of organizations and individuals who have a vision of making a personal impact on people they will be able to come to know and love. Obviously, this isn't a random mission adventure sort of thing. But I wanted to let you know that there were other types of "missions" involvements available.
My husband and I have fallen in love with the idea of "adopting" an area. New Life for Haiti will be starting out in Gatineau, near Jeremie, a port city in the southern peninsula. They are in the process of making several trips to Haiti to survey needs and have partnered with a group called "Mozal" who are Haitian businessmen from the Gatineau area, who want to give back to the area that raised them.
The first New Life for Haiti event will be October 28th, to raise money for the initial outpatient clinic in the mountains. This area of some 400,000 people is currently served by a single hospital in Port Jeremie.
If you are interested in learning more about what's happening with this coalition, here's some links:

I know I'm overenthusiastic about this, it's just really grabbed my heart. I know it isn't for everyone.
Meg,
I work for an organization that offers pre-packaged mission experiences for individuals, groups and families. We have several options each year. We also have a program called "International Initiatives" which partners with various countries to offer support and mission opportunities. Check it out. The website is www.wmu.com Go to "get involved" and then click on "ministries." Hope you find just what you are looking for.

Hey Meg,
I work for SIM (Serving In Mission, sim.org), an international mission organization that has quite a bit of work going on in South America. If you're interested in exploring short-term opportunities with SIM, please feel free to contact me, and I'd be glad to help!
Shalom,
Steve Knight

You could look into the organization my friend Kristine Socall (and her brother Brian) started, Adventrek. They're not a "missions organization" per se, but they hook people up that want a foreign service experience.
